Apple: Apple Sour Cream Pie

1 recipe Single Piecrust
2 tablespoons unsalted butter
3 pounds baking apples -- peeled, cored and
sliced into eighths
1 cup granulated sugar
1 teaspoon vanilla
1 cup chopped walnuts
3/4 cup packed dark-brown sugar
3/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
6 tablespoons unsalted butter -- cut into pieces and chilled
3/4 cup sour cream
1/8 teaspoon grated nutmeg
1 egg -- lightly beaten
Recipe
Heat oven to 375ºF. On floured surface, roll dough for piecrust into 12-inch circle. Fit dough into 9-inch pie pan; form stand-up edge; crimp. Melt butter in large saucepan. Add apples and 1/2 cup granulated sugar; cook, stirring, 12 to 15 minutes, until barely tender. Add 1/2 teaspoon vanilla. Remove from heat.
Mix together nuts, brown sugar, 1/2 cup flour, ground cinnamon and 1/8 teaspoon salt in medium-size bowl. Rub in butter with fingertips until mixture is crumbly. Mix sour cream, remaining granulated sugar, salt, flour and the vanilla in a bowl. Mix in nutmeg and egg. Drain apples; add to sour cream mixture. Spoon into shell. Top with nut mixture. Place on baking sheet. Bake in 375ºF oven 55 minutes, until apples are tender. Tent with foil if browning too quickly. Cool 4 hours.
