Apple: Apple Sour Cream Pie

1 recipe Single Piecrust
2 tablespoons unsalted butter
3 pounds baking apples -- peeled, cored and
sliced into eighths
1 cup granulated sugar
1 teaspoon vanilla
1 cup chopped walnuts
3/4 cup packed dark-brown sugar
3/4 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon salt
6 tablespoons unsalted butter -- cut into pieces and chilled
3/4 cup sour cream
1/8 teaspoon grated nutmeg
1 egg -- lightly beaten
Recipe
Heat oven to 375�F. On floured surface, roll dough for piecrust into 12-inch circle. Fit dough into 9-inch pie pan; form stand-up edge; crimp. Melt butter in large saucepan. Add apples and 1/2 cup granulated sugar; cook, stirring, 12 to 15 minutes, until barely tender. Add 1/2 teaspoon vanilla. Remove from heat.
Mix together nuts, brown sugar, 1/2 cup flour, ground cinnamon and 1/8 teaspoon salt in medium-size bowl. Rub in butter with fingertips until mixture is crumbly. Mix sour cream, remaining granulated sugar, salt, flour and the vanilla in a bowl. Mix in nutmeg and egg. Drain apples; add to sour cream mixture. Spoon into shell. Top with nut mixture. Place on baking sheet. Bake in 375�F oven 55 minutes, until apples are tender. Tent with foil if browning too quickly. Cool 4 hours.
