Lemon: Aunt Kitty's Lemon Pie

1 unbaked 9-inch pastry shell
1 1/2 cups sugar
1/3 cup butter or margarine -- softened
3 large eggs
1 tablespoon grated lemon rind
1/4 cup fresh lemon juice
1/4 teaspoon salt
1/2 teaspoon lemon extract
Recipe
LINE pastry shell with aluminum foil, and fill with pie weights or dried beans. BAKE at 425�F for 7 minutes, and remove weights and foil. WHISK together sugar and butter until blended. Whisk in eggs and remaining ingredients. Pour into piecrust. BAKE at 350�F for 30 minutes or until set. Cool on a wire rack. Yield: 1 (9-inch) pie.
