Lemon: Aunt Kitty's Lemon Pie

1 unbaked 9-inch pastry shell
1 1/2 cups sugar
1/3 cup butter or margarine -- softened
3 large eggs
1 tablespoon grated lemon rind
1/4 cup fresh lemon juice
1/4 teaspoon salt
1/2 teaspoon lemon extract
Recipe
LINE pastry shell with aluminum foil, and fill with pie weights or dried beans. BAKE at 425ºF for 7 minutes, and remove weights and foil. WHISK together sugar and butter until blended. Whisk in eggs and remaining ingredients. Pour into piecrust. BAKE at 350ºF for 30 minutes or until set. Cool on a wire rack. Yield: 1 (9-inch) pie.
