Cherry: Bill's Award Winning Cherry Pie

My Favorite Pie Crust
3 cups all purpose flour
1 teaspoon salt
1 cup vegetable shortening
1 egg, lightly beaten
1/4 cup plus 2 tablespoons cold water
1 tablespoon distilled white vinegar
Combine flour and salt, cut in shortening. Combine 1 egg, cold water, and vinegar, sprinkle over surface, stirring until dry ingredients are moistened. Shape into a ball and cut in half.
For a 9" pie
1 recipe pie crust, cut in half
8 cups tart water pack cherries, drained
1-1/2 cups sugar
4 tablespoons cornstarch
1/2 teaspoon ground cinnamon
1 teaspoon vanilla
1 teaspoon almond extract
1 teaspoon red food coloring
1/4 teaspoon salt
2 tablespoons butter
Recipe
Roll out 1/2 of the pastry and place into a 9" pie pan to form the bottom crust and set aside. Roll out remaining 1/2 of pastry and cut into strips to form the lattice top and chill. Put drained cherries in a large bowl and add sugar, cornstarch, cinnamon, salt, vanilla and almond extract, and red food coloring then mix together well. Pour into pie shell and dot with butter. Place lattice on top of the cherries and finish the edges. Sprinkle lightly with cinnamon sugar if desired. Bake 400 degrees for 1 hour.
