Blueberry: Blueberry Sour Cream Pie

3 tablespoons Sugar
1/4 teaspoon Cinnamon
1/8 teaspoon Salt
1 Pinch nutmeg
2 cups Blueberries
3 Eggs
1 cup Sour cream
1/4 cup Honey
1/4 cup Sugar
Recipe
Prepare a 1-crust 9" pie shell. Chill 30 minutes. Bake 400�F for 10 minutes. In bowl, beat 1 egg white and 2 tsp. sugar until frothy; brush pie shell with glaze and bake 350�F for 15 minutes. more.
FILLING: In dish combine 3 tb. sugar and cinnamon, salt, and nutmeg. In bowl, toss blueberries with this sugar mixture In a small bowl, beat the eggs with the sour cream and the honey and sugar. Add this custard mixture to the berries. Pour into prepared pie shell and bake at 325�F for 1 hr. Serve warm.
