Coconut: Buttermilk Coconut Pie

1 1/4 cups sugar
2 tablespoons flour
1/2 cup butter, melted
3 eggs, beaten
1/2 cup buttermilk
1 teaspoon vanilla
1 can coconut, divided (3 1/2 oz)
1 unbaked 9" pastry shell
Recipe
Combine sugar and flour. Add melted butter, eggs, buttermilk, vanilla and 2/3 of coconut. Mix well. Pour into shell. Sprinkle with remaining coconut. Bake at 325ºF for 1 hour and 5 minutes or until set. Serves 8.
