Chocolate: Chocolate Rum Pie

6 ounces chocolate chips
1 egg
2 eggs, separated
2 tablespoons dark rum
1 1/2 cups heavy cream
1 chocolate graham cracker crumb crust
Recipe
Melt the chips and add the whole egg and the egg yolks one at a time, beating well after each addition. Beat the egg whites until they are at the stiff peak stage. Fold the egg whites in batches into the chocolate mix alternating with splashes of rum until all are incorporated. Whip the cream and fold 2/3 of it into the chocolate mix. Spoon into the pie crust and top with the remaining whipped cream. Lay chocolate shavings over the top and refrigerate for a minimum of 2 hours before serving.
