    Coconut: Coconut Custard Pie

    List of Ingredients

    4 slightly beaten eggs
    1/2 cup sugar
    1/4 teaspoon salt
    1/2 teaspoon vanilla
    2 1/2 cups milk, scalded
    1/2 cup sweetened coconut flakes
    9 " unbaked pastry shell

    Recipe

    Blend eggs, sugar, salt, and vanilla. Gradually stir in scalded milk. Pour into pastry shell. Sprinkle with coconut. Bake at 350�F for 35 to 40 minutes (until knife inserted halfway between center and edge comes out clean. Cool on rack and then chill.
