    Coconut: Coconut Custard Pie

    List of Ingredients

    4 slightly beaten eggs
    1/2 cup sugar
    1/4 teaspoon salt
    1/2 teaspoon vanilla
    2 1/2 cups milk, scalded
    1/2 cup sweetened coconut flakes
    9 " unbaked pastry shell

    Recipe

    Blend eggs, sugar, salt, and vanilla. Gradually stir in scalded milk. Pour into pastry shell. Sprinkle with coconut. Bake at 350ºF for 35 to 40 minutes (until knife inserted halfway between center and edge comes out clean. Cool on rack and then chill.
