    Pecan: Coffee Pecan Pie

    List of Ingredients

    3 eggs, beaten
    3/4 cup unsulfured molasses
    3/4 cup white corn syrup
    1/2 cup double-strength coffee
    2 tablespoons butter, melted
    1/4 teaspoon salt
    1 teaspoon vanilla
    1 cup chopped pecans
    4 tablespoons flour
    8 " unbaked pie shell

    Recipe

    Preheat oven to 375ºF. Combine eggs, molasses, corn syrup, coffee, melted butter or margarine, salt and vanilla. Mix thoroughly. Combine pecans and flour, add to liquid mixture and pour into unbaked pie shell. Bake 40 to 45 minutes in moderate oven, 375ºF, or until firm. Cool before cutting. Garnish with whipped cream if desired. Portions should be smaller than average. Yield: 7 servings.
