White Chocolate: Dairy Free White Chocolate Lemon Pie

2 1/2 cups mashed extra firm tofu
1/2 cup pure maple syrup
1 cup vanilla or white chocolate chips, melted
2 tablespoons oil
2 teaspoons pure lemon extract
2 tablespoons fresh grated lemon rind
1 unbaked pie crust
Recipe
Heat oven to 350ºF. In a food processor or blender, combine tofu, maple syrup, melted chips, oil, lemon extract, and lemon rind. Process until thoroughly combined. Pour into prepared pie crust. Bake for 1 hour or until filling is firm. Cool in refrigerator for 2 hours before serving.
