Cherry: Deep Dish Cherry Pie in Shortbread Crust

19 ounces red sour pitted cherries
sugar
2 tablespoons flour
1 dash salt
1 tablespoon lemon juice
1 tablespoon butter
1 cup prepared biscuit mix
1/4 cup milk
Recipe
Drain cherries; heat juice to boiling. Add combined 3/4 cup sugar, flour and salt. Cook till thickened, stirring constantly. Cool slightly. Add lemon juice, butter and cherries; pour into casserole dish. Combine Bisquick mix and 2 Tblsp sugar; add milk and beat well. Spoon batter over cherries. Bake at 400ºF for 20 to 25 minutes or until brown.
