mixture for one Easy Pie Crust
3 tablespoons unsweetened cocoa powder
1 tablespoon maple syrup
1 1/2 pounds frozen raspberries, thawed and drained -- liquid reserved
2 tablespoons arrowroot powder
1/2 cup light brown sugar
1 teaspoon almond extract
Recipe
Preheat oven to 350ºF To the easy pie crust mixture, add the cocoa and maple syrup and process in a food processor until well blended. Press the mixture into a 9" pie pan and bake for 20 minutes until lightly browned; cool. Combine the reserved raspberr liquid and the arrowroot in a saucepan until smooth. Add the brown sugar and gently fold in the berries. Place over medium heat and stir with a wooden spoon until mixture becomes clear and thickened. Cookk for 1 minute more. Add the almond extract and cool. Spoon raspberry mixture into pie crust. Refrigerate at least 2 hours efre serving. Serves 8.
