    Pumpkin: Easy Blender Pumpkin-Cheese Pie

    List of Ingredients

    1 8" graham-cracker pie shell ready-to-fill
    1 c plain pumpkin cooked or canned
    1 1/2 c low-fat cottage cheese creamed large-curd
    3 eggs
    1 tb rum flavoring or vanilla extract
    1 1/2 ts pumpkin-pie spice
    1 pn salt
    5 tb brown sugar

    Recipe

    Unwrap pie shell. Combine remaining ingredients in blender; cover and blend on high speed until very smooth. Pour into pie shell. Bake in a preheated 275 oven 1 hour or more, until filling is set. Chill several hours before serving.
