    Lemon: Easy Lemon Chiffon Pie

    List of Ingredients

    1 package lemon gelatin-3-ounce
    3/4 cup boiling water
    1/2 cup sugar
    Juice and grated peel of 1 lemon
    1 2/3 cups evaporated milk -- cold-whipped
    1 baked pastry shell-9-inch

    Recipe

    Dissolve gelatin in boiling water. Add sugar, lemon juice and lemon peel. Chill until syrupy. Fold in evaporated milk. Spoon into shell. Sprinkle toasted coconut on top, if desired. Chill until firm.
