Coconut: Edna's Coconut Cream Pie

2 cups milk
1/4 cup sugar
2 tablespoons cornstarch
2 eggs
1 tablespoon vanilla
1/2 cup coconut
1 tablespoon sugar
1 teaspoon cream of tartar
Recipe
Mix the 1/4 cup sugar, cornstarch and egg yolks into cold milk, stir very well, heat and stir until it thickens. Add vanilla and coconut into baked 8 inch pie shell. Beat egg whites and the 1 tbsp. sugar and cream of tarter until stiff, spread over pudding mixture so it touches the sides of dough, bake in 350ºF oven until whites are nice and brown.
