Strawberry: Fluffy Strawberry Pie

9 inch baked pie shell
3/4 cup boiling water
3 ounces strawberry jello mix
1 teaspoon grated lime peel
1/2 cup lime juice (2 limes)
2 cups heavy cream
1 cup powdered sugar
2 cups strawberries, slightly crushed
Recipe
Prepare and bake pie shell. Pour boiling water on jello in large bowl; stir until jello is dissolved. Stir in lime peel and lime juice. Refrigerate until very thick but not set, about 1 hour. Beat jello mixture on high speed until thick and fluffy, about 4 minutes. Beat whipping cream and powdered sugar in chilled bowl until stiff; fold whipped cream and strawberries into jello mixture. Pour into pie shell. Refrigerate until set, about 3 hours. Garnish wiith whipped cream, sliced strawberries and kiwifruit. Serves 8.
