Rhubarb: French Rhubarb Pie

1 egg
1 cup white sugar
1 tablespoon flour
1 teaspoon vanilla
3 cups diced rhubarb
3/4 cup flour
1/3 cup butter
1/2 cup brown sugar
1 unbaked pie shell (9")
Recipe
Combine egg, white sugar, 1 tbl. flour and vanilla; mix well and then fold in diced rhubarb. Spoon into unbaked pie shell. Combine 3/4 c. flour, butter and brown sugar; crumble with fingers and spread over fruit mixture. Bake at 400ºF for 10 minutes, then reduce oven temperature to 350ºF and bake another 40 minutes.
