Apple: Healthy Apple Pie

1 package cook and serve vanilla pudding mix
1 cup unsweetened apple juice
1 1/2 teaspoons apple pie spice
3 cups cored, unpeeled chopped cooking apples
1 Keebler graham piecrust
3/4 cup cool whip lite
Recipe
Preheat oven to 375ºF. In medium saucepan, combine dry pudding, apple juice, and 1 tsp apple pie spice. Add apples, mixing well to combine. Cook over medium heat, stirring often, til mix thickens and starts to boil. Pour hot mixture into piecrust. Bake for 20 minutes. Place on wire rack to cool completely. When cooled, spread cool whip evenly over top. Evenly sprinkle with remaining 1/2 tsp apple pie spice. Refrigerate till ready to serve. Cut into 8 servings.
