    Strawberry: Heavenly Strawberry Pie

    List of Ingredients

    2 cups sliced fresh strawberries
    1 Keebler shortbread piecrust
    1 package sugar free strawberry jello
    1 package sugar free vanilla cook and serve pudding
    1 1/2 cups + 1/2 tsp water
    1 cup cool whip lite
    1 teaspoon coconut extract
    5 drops red food coloring
    2 tablespoons flaked coconut

    Recipe

    Place sliced strawberries in piecrust. In medium saucepan, combine dry jello, dry pudding and 1 1/2 c. water. Cook over medium heat, stirring constantly, til mix thickens and starts to boil. Remove from heat and spoon hot mixture over strawberries. Refrigerate at least 2 hours. In small bowl, combine cool whip, coconut extract and 2-3 drops red food coloring.

    Spread mixture evenly over set filling. In plastic bag, combine remaining 1/2 tsp water and remaining 2-3 drops food coloring; add flaked coconut and shake til coconut is tinted pink. Place coconut in small dish for 1-2 minutes to dry. Evenly sprinkle dried coconut over top of pie. Refrigerate at least 15 minutes or til ready to serve. Cut into 8 servings.
