1 cup milk
1 cup sugar
3 tablespoons flour
1 tablespoon butter
unbaked 9" pie shell
Recipe
Cream butter, sugar and flour. Separate eggs and add yolk to sugar / butter. Add lemon (juice plus some zest) and then milk. Quickly stir in stiffly beaten egg whites. Bake in raw 9" pie shell at 400ºF for 15 minutes, then for 25-30 at 375ºF. Test top layer like cake. This comes out like lemon pudding with a "foamy" cake layer on top.
