Banana: Lowfat Banana Cream Pie

1/2 cup fructose or table sugar
1/4 cup cornstarch
1 teaspoon flour
2 1/2 cups skim milk
1/3 cup egg whites or egg substitute
2 teaspoons pure vanilla
2 medium bananas, sliced into rounds
1 baked pie crust
Recipe
In large saucepan, combine sugar, cornstarch and flour, whisking until smooth. Stir in milk. Cook over medium heat, stirring constantly, until mixture boils and thickens, about 10 minutes. Remove from heat. Stir some of hot mixture into egg substitute and return mixture to saucepan. Cook, stirring constantly, until slightly thickened. Remove from heat and stir in vanilla and sliced bananas. Pour into prepared pie crust. Cool in refrigerator 2 hours before serving.
