    Bread Pudding: Banana Eggnog Bread Pudding

    List of Ingredients

    2 packages cook and serve vanilla pudding mix
    4 cups skim milk
    1/2 cup raisins
    1 1/2 teaspoons rum extract
    1/4 teaspoon ground nutmeg
    12 slices bread, cubed
    1 cup sliced banana
    1 tablespoon brown sugar twin
    1 tablespoon reduce calorie margarine

    Recipe

    Preheat oven to 350ºF. Spray an 8x8 baking dish with butter flavor cooking spray. In large saucepan combine 1 pkg dry pudding and 2 1/2 c. milk. Add raisins. Mix well to combine, then cook over medium heat, stirring constantly, til mix starts to boil. Remove from heat and stir in 1/2 tsp rum extract and nutmeg. Add bread cubes and bananas; mix gently to combine. Spoon bread mix into prepared baking dish. Bake for 35-45 minutes or til knife inserted in center comes out clean.

    In medium saucepan, combine remaining package dry pudding, remaining 1 1/2 c. skim milk, and brown sugar twin; mix well to combine and let set until 5 minutes before bread pudding has completed baking. Then, cook over medium heat, stirring constantly, til mix thickens and starts to boil. Add margarine and remaining 1 tsp rum extract, mix well to combine. Continue cooking on low until bread pudding has completed baking, stirring occasionally. Remove baking dish from oven and cut warm bread pudding into 6 servings. For each serving, place piece of pudding on dish and spoon about 1/4 c. warm rum sauce over top. Serves 6.
