Bread Pudding: Blueberry Bread Pudding

3 tablespoons sugar
1/4 teaspoon salt
1/2 teaspoon vanilla
2 eggs, beaten
1/2 teaspoon almond extract
3 cups wheat bread, cubed
3/4 cup skim milk, scalded
2 cups frozen blueberries, thawed
Recipe
Combine the sugar, salt, vanilla, eggs and almond extract. Add the bread cubes and mix well. Slowly add the milk, stirring constantly, then add the berries. Pour into a 2 quart greased casserole and set in a pan of hot water. Bake at 350ºF for 1 hour. Serve warm.
