1 cup egg substitute, liquid
1/2 cup sugar
3 tablespoons instant coffee powder
3 tablespoons cornstarch
2 cups skim milkRecipe
Pour egg substitute into small bowl and set aside. In medium saucepan, combine sugar, espresso powder, cornstarch. Slowly whisk in milk. Cook over medium heat, stirring constantly, until mix boils. Boil and stir for one minute. Slowly whisk 1/2 cup of the coffee mix into the egg sub, then slowly whisk the egg mix back into the coffee mixture, stirring constantly. Cook over low heat, stirring constantly, about 1 minutes. Pour into six 6 oz serving cups. Refrigerate at least 2 hours. Serve with cool whip and cinnamon if desired.
