Christmas Party Cherry Pudding

1 16-ounce can sour pie cherries
2 teaspoons baking soda
2 eggs
2 cups all-purpose flour
2 cups sugar
1 cup chopped pecans
Cherry Sauce (below) Recipe
Preheat oven to 350°F. Spray a 13x9-inch baking pan with non-stick vegetable spray. Drain cherries, reserving juice. Add baking soda to the cherries, mix and let stand. In a large mixing bowl, beat eggs until thick and lemon-colored. Add sugar, flour, pecans, and cherries; mix well. Pour into prepared baking pan. Bake for 30 minutes.

CHERRY SAUCE
1 16-ounce can sour pie cherries
Reserved juice from cherries
1/3 cup sugar
1/8 teaspoon ground nutmeg
1/8 teaspoon salt
2 tablespoons butter or margarine
Whipped cream
Maraschino cherries
In a medium saucepan, combine cherries, cherry juice, sugar, nutmeg, and salt; cook, stirring constantly until thickened. Stir in butter. Cut pudding into squares. Place a square of pudding on a dessert plate. Spoon sauce over the top. Add a dollop of whipped cream; place a cherry on top.
