Custard: Banana Coconut Custard

3 eggs
3 ripe bananas cut in pieces
1 1/2 cups skim milk
1 cup flaked unsweetened coconut
1/3 cup unbleached white flour
1/2 teaspoon baking powder
1/2 teaspoon nutmeg
1/2 teaspoon vanilla flavoring
1/4 teaspoon cinnamon Recipe
Blend eggs and bananas together in blender until smooth. Add remaining ingredients and blend. Pour into 6 eight-ounce custard cups. Preheat oven to 350 degrees. Place cups in a pan with one-inch of water. Bake for 45 minutes or until custards are set. Refrigerate and serve.
