    Honey Raisin Pudding

    3/4 cup raisins
    1/2 cup honey
    4 cups bread crumbs
    1 teaspoon ground cinnamon
    4 cups milk
    5 eggs, lightly beaten
    1/4 cup firmly packed brown sugar
    2 teaspoons vanilla extract
    1/4 teaspoon ground cinnamon
    2 tablespoons sugar

    Preheat oven to 350°F.  Spray a 2-quart casserole with non-stick vegetable spray. In a large saucepan, combine raisins, honey, bread crumbs, and cinnamon.  Over low heat, cook, stirring constantly, until the bread absorbs the honey.

    In a large mixing bowl, combine milk, eggs, sugar, and vanilla, blending thoroughly.  Stir in bread mixture until well blended.  Pour into prepared casserole.  In a small bowl, combine cinnamon and sugar; sprinkle over the top of the pudding. Bake for 1 hour or until a knife inserted in the center comes out clean.  Serve warm topped with whipped cream, if desired.
