1 cup rice (uncooked)
1 cup sugar
1/2 gallon milk
2 eggs
1 cup milk
2 teaspoons vanilla

Pour rice, sugar and 1/2 gallon milk into pot and bring to a boil. Stir and simmer for 1 hour with lid on. Stir occasionally. In separate dish, beat eggs and 1 c. milk. Take a little of the hot mixture out of pan and mix with egg mixture (this helps prevent curdling of the egg). Stir egg mixture into rice mixture. Add vanilla to taste. If too thick, add a little more milk. Pour into a 13" x 9" baking pan or serving bowl. Cool. Top with cinnamon.
