    Rice Pudding: Maple Rice Pudding

    List of Ingredients

    4 cups 2% low-fat milk
    2/3 cup arborio rice
    2/3 cup maple syrup
    1/4 cup raisins
    1 teaspoon vanilla extract
    1/4 teaspoon salt
    1/4 teaspoon ground cinnamon
    1/4 teaspoon ground nutmeg

    Recipe

    Combine first 4 ingredients in a medium saucepan; bring to a boil over medium heat, stirring frequently. Reduce heat to low; cook 50 minutes or until rice is tender and mixture is creamy, stirring occasionally. Remove from heat, and stir in vanilla, salt, cinnamon, and nutmeg.Yield: 8 servings.
