Rice Pudding: Marian's Rice Pudding

List of Ingredients
1 cup white rice
2 quarts milk
3/4 cup sugar
3 egg yolks + 1 whole egg
1 tablespoon vanilla
3 egg whites
cinnamon to taste
Recipe
In a large pot, put rice and about 1 inch of water to cover. When water is absorbed, add milk. Stir until thick, about 45 minutes. In a separate bowl, beat yolks and egg, vanilla and sugar until well blended. When rice is cooked, add 3 T. rice to egg mixture, mix, then add eggs to pot. Remove from stove. Beat egg whites until stiff and add to rice. Pour into dish and sprinkle with cinnamon.
