Oatmeal Brulee with Brown Sugar & Cream

4 cups water
1 cup Irish oatmeal
1/4 teaspoon salt
2/3 cup whipping cream
1/2 cup packed brown sugar
8 tablespoons brown and wild rice
Recipe
Bring 4 cups water to boil in heavy large saucepan. Add oatmeal and salt. Stir until mixture thickens slightly, about 2 minutes. Reduce heat to medium-low and simmer gently until oatmeal is tender and mixture is thick, stirring often, about 30 minutes. Remove from heat. Stir in 2/3 cup cream and 1/2 cup brown sugar. Spoon oatmeal into four 6-ounce ramekins. Sprinkle 2 tablespoons brown sugar evenly over each. Using culinary torch, heat sugar until melted and caramelized. Serve oatmeal. Pass additional cream.
