Rice Pudding: Old Fashioned Rice Pudding

1/2 cup liquid egg substitute
1/4 cup sugar
1/4 teaspoon ground cinnamon
1 1/2 cups skim milk
1/4 cup long-grain rice
1/2 cup raisins
1 teaspoon vanilla
Recipe
Combine egg substitute, sugar and cinnamon in small bowl; set aside. Heat milk in a saucepan just to a boil. Stir in rice; return mixture to a boil. Reduce heat, cover and simmer for 15 minutes. Stir egg mixture gradually into rice. Bring to a boil, reduce heat and simmer, stirring constantly, for 2 to 3 minutes or until slightly thickened. Stir in raisins and vanilla. Spoon into dessert dishes. Serve warm or cold. Garnish as desired.
