1 cup frozen blueberries
3 tablespoons frozen apple juice concentrate
2 tablespoons maple syrup
1 teaspoon vanilla
2 teaspoons grated orange peel
2 1/2 cups water
3/4 cup polenta or fine ground cornmealRecipe
In medium bowl, combine berries, apple juice, maple syrup, vanilla and orange peel. In med saucepan, bring water to boil and gradually stir in polenta. Simmer and stir continuously for 15-20 minutes. Polenta is done when it tears away from sides of pot. Remove from heat and stir in blueberry mixture. Spoon into individual serving bowls and top with maple syrup. Good warm or cold.
