    Flan: Pumpkin Flan

    List of Ingredients

    FLAN:
    8 eggs
    29 ounces solid pack pumpkin
    14 ounces sweetened condensed milk
    2 teaspoons ground cinnamon
    1 teaspoon ground ginger
    1/2 teaspoon ground cloves
    1/2 teaspoon ground mace
    1/2 teaspoon ground nutmeg
    1/4 teaspoon salt
    1 teaspoon vanilla

    TOPPING:
    1/2 cup chopped almonds
    1/4 cup chopped pecans
    2 tablespoons butter
    1/4 cup packed brown sugar
    1 teaspoon vanilla

    Recipe

    In a large mixing bowl, combine flan ingredients; beat well. Pour into a lightly greased 9-inch springform pan. Bake at 350ºF. for 55 minutes or until knife inserted near center comes out clean. Cool on a wire rack for 10 minutes. Carefully run a knife around the edge of pan to loose; cool 1 hour longer. Meanwhile, in a skillet, brown almonds and pecans in butter. Stir in brown sugar and vanilla. Remove sides of pan; sprinkle flan with topping.
