    Rice Pudding: Quick Rice Pudding

    List of Ingredients

    1/3 cup sugar
    2 tablespoons cornstarch
    1/8 teaspoon salt
    2 cups milk
    2 egg yolks, slightly beaten
    2 tablespoons butter
    2 teaspoons vanilla
    1/8 teaspoon cinnamon
    1/2 cup uncooked rice
    1 3/4 cups water
    1/2 teaspoon salt

    Recipe

    Blend sugar and cornstarch with salt in saucepan. In separate bowl, combine milk and yolks. Gradually stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil. Boil for 1 minute, stirring constantly. Remove from heat and add butter, vanilla and cinnamon. Set aside. Cook rice with water, adding salt. Add either 1/3 c. raisins or 1 1/2c. leftover rice. When rice is done, stir into pudding. Cool before serving.
