2 cups cooked rice
2/3 cup sugar
1 egg -- beaten
1 teaspoon vanilla
2 tablespoons butter
cinnamon or nutmeg
Recipe
Mix rice, sugar, and egg in saucepan. Bring to a boil and simmer till thick. Add vanilla and butter. Serve sprinkled with cinnamon or nutmeg. Baked Pudding: Mix rice, sugar, and egg in saucepan. Add 1/2 C. milk; and bring to a boil. Add vanilla and butter. Pour into a 9x9 greased pan. Sprinkle with cinnamon or nutmeg. Bake at 350ºF for 30 minutes.
