Rice Pudding: Baked Apple Rice Pudding

2 Egg yolks, slightly beaten
2 medium Apples, peeled, cored and finely chopped (2 cups)
1 1/2 cups Rice, cooked
1/2 cup Milk
1/2 cup Pitted whole dates, chopped
1/4 cup Sugar
2 tablespoons Butter or margarine, melted
1 teaspoon Vanilla
2 Egg whites Recipe
In bowl stir together egg yolks, apples, cooked rice, milk, dates, sugar, butter or margarine, and vanilla. Beat egg whites to stiff peaks (tips stand up). Fold egg whites into apple mixture. Turn into a 1 1/2 quart souffle dish. Place in a larger baking pan. Set on oven rack. Pour boiling water into larger pan to a depth of 1 inch. Bake in 325¼F oven for 70 to 75 minutes. Serve warm or chilled. Garnish with fresh apple slices dipped in lemon juice, if desired.
