Rice Pudding: Creamy Honey Rice Pudding

1 cup long grain rice
2 1/4 cups water
1/2 teaspoon extra light olive oil
1/8 teaspoon nutmeg
1/3 cup honey
1/2 cup sugar
3/4 cup low-fat evaporated milk
1/4 cup milk
3 egg yolks
1/3 cup raisins
3/4 teaspoon vanilla extract
Cinnamon, to tasteRecipe
In large saucepan, combine rice, water, olive oil and nutmeg. Over high heat, birng to boil; then, lower heat, cover and simmer for 15-20 minutes. Add honey and sugar to rice mixture. Stir in evaporated milk, skim milk and egg yolks. Cook over medium heat for 3 minutes or until mixture thickens. Add raisins and vanilla; mix well. Pour into serving dish and sprinkle with
cinnamon.
