Ricotta Cheese Pudding

8 ounces ricotta cheese
5 eggs
lemon juice to taste
1/2 cup sugar + more to tasteRecipe
Mix all well in a blender or food processor, pour into a greased oven-proof dish. Throw in a handful or so of sultanas if desired. Bake in a moderate oven for about 1/2 hour, or until set. Can be served hot, warm or cold - if it lasts that long!
