Rice Pudding: Stovetop Rice Pudding *

1 cup water
1 tablespoon butter
1/4 teaspoon salt
1 teaspoon vanilla
1 cup short grained rice
4 cups milk
1/2 cup sugar
Recipe
Bring water to boil in heavy 3 quart saucepan Stir in rice and butter. Cook uncovered over medium heat for 4-5 minutes, stirring occasionally, til water is absorbed and rice looks creamy. Stir in milk and salt. Bring to boil over medium-high heat; reduce to low, cover, and simmer for 50-55 minutes til rice is tender (stir occasionally). Stir in sugar and vanilla. Pour into serving dish. Sprinkle with cinnamon sugar.
