SHELL:
1 cup flour
2 tablespoons sugar
1/4 teaspoon salt
6 tablespoons butter, room temperature
1 egg yolk
2 tablespoons ice water
FILLING:
6 ounces cream cheese
1/3 cup sour cream or yogurt
2 tablespoons sugar
1 quart strawberries, hulled
GLAZE:
1 10 ounce pkg frozen raspberries in syrup -- thawed
1/4 cup sugar
1 teaspoon cornstarch
Recipe
Combine flour, sugar and salt; cut in butter until crumbly. Combine egg yolk and water; stir into flour until dough forms a ball. Press dough into bottom and up sides of a 9" tart pan. Prick bottom and sides to prevent excess shrinkage. Bake at 400ºF for 12-15 minutes until light brown. Cool and set aside.
Beat cream cheese til fluffy, then beat in sour cream and sugar. Spread over bottom of cooled shell. Arrange strawberries, tips up, over cream cheese. Puree raspberries in food processor; pour through sieve to remove seeds. Combine puree wit enough water to make 1 cup liquid. In small saucepan, combine sugar and cornstarch. Gradually stir in puree; cook until thick and clear. Cool slightly; pour over berries and chill at least an hour. Serves 6.
