    Ultimate Butter Tart

    List of Ingredients

    PASTRY:
    2 cups flour
    3/4 teaspoon salt
    1 cup shortening
    4 tablespoons ice water

    FILLING:
    1/2 cup packed brown sugar
    1/2 cup corn syrup
    1/4 cup butter
    1 egg
    1 teaspoon vanilla
    1/4 teaspoon salt
    3/4 cup raisins

    Recipe

    Prepare pastry. Roll out thinly on lightly floured surface. Cut into rounds with 4" cutter. Fit into medium-sized muffin cups. Combine all filling ingredients except raisins and mix well. Put raisins into pastry shells, dividing evenly. Fill 2/3 full with syrup mixture. Bake on bottom shelf of oven for 425ºF for 12-15 minutes. Filling will be runny if baked lesser time and too thick if baked longer. Do not overbake. Cool on wire rack. For maple tarts, replace corn syrup with maple syrup and use walnuts instead of raisins.
