1 1/2 pounds fresh asparagus
1/2 cup chopped onion
2 tablespoon butter or margarine melted
2 tablespoon all-purpose flour
1 cup sour cream
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup shredded Cheddar cheese Recipe
Spray a 2-quart casserole with non-stick vegetable spray. Place asparagus in a vegetable steamer over boiling water; cover and steam until tender. Arrange asparagus in prepared casserole. Preheat oven to 350°F.
In a small saucepan, sauté onion in butter; add flour, stirring until smooth. Cook for 1 minute, stirring constantly. Add sour cream, salt, and pepper; cook until thoroughly heated - DO NOT BOIL. Spoon over asparagus. Bake for 15 minutes. Sprinkle top evenly with cheese; bake for 5 minutes or until cheese melts.
