2 pounds asparagus
Boiling water
1/4 cup butter or margarine
1/4 cup white wine
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup shredded Monterey Jack cheese Recipe
Preheat oven to 425°F. Grease 4 ramekins with butter. Wash asparagus and snap off tough ends. Lay spears in a shallow pan and cover with salted boiling water; bring to a boil. Simmer for 8 minutes; drain. In a small saucepan, melt butter; stir in the wine. Pour over asparagus; sprinkle with salt, pepper, and cheese. Bake for 15 minutes or until cheese is melted. Serves 4.
