    Asparagus: Asparagus with Lemon, Garlic & Cheese

    List of Ingredients

    1 pound fresh thin asparagus spears
    2 tablespoons plain nonfat yogurt
    4 tablespoons chopped chives
    2 teaspoons lemon juice
    2 tablespoons garlic croutons, crushed into crumbs
    2 tablespoons grated parmesan cheese
    1 tablespoon melted butter

    Recipe

    Trim ends of asparagus, and if stalks are coarse, peel them with a vegetable peeler. Tie asparagus and stand it up in a steamer. Steam for 5-7 minutes or until firm tender and drain. Arrange cooked asparagus in a porcelain baker. Brush asparagus with yogurt, sprinkle with chives and drizzle with lemon. Sprinkle with crumbs and parmesan. Drizzle top with melted butter. Bake in a 350ºF oven until heated through. Broil for a few seconds to brown the top. Serves 8. Entire dish can be assembled earlier in the day and brought to room temperature before heating.
