    Zucchini: Baked Zucchini Crisps & Marinara Sauce

    List of Ingredients

    1 pound zucchini
    3 tablespoons unflavored nonfat yogurt
    1/3 cup savory cracker crumbs (Ritz)
    1/3 cup grated parmesan cheese

    Recipe

    Prepare zucchini by scrubbing (do not peel). Slice on diagonal into 1/2" thick slices. Spread each slice of zucchini on both sides with thin coating of yogurt. Combine crumbs and cheese, and sprinkle on both sides of zucchini. Place zucchini on a plastic coated cookie sheet and bake at 400ºF until golden brown, about 20 minutes. Carefully turn and brown the other side. Serve with a little Light marinara Sauce on the side for dipping. Serves 6-8.

    Light Marinara Sauce:
    1 can (1 lb.) stewed tomatoes, chopped - do not drain
    3 tablespoons tomato paste
    1 small onion, minced
    2 cloves garlic, minced
    1 teaspoon olive oil
    1 teaspoon sugar
    1/2 teaspoon Italian herb seasoning
    1/2 teaspoon sweet basil flakes
    pinch of cayenne
    salt and pepper to taste

    In a saucepan, place all ingredients, cover pan and simmer mixture for 30 minutes or until onion is soft and sauce is thickened. Yields about 2 cups.
