    Beets: Beets in Mustard Sauce

    2 pounds beets trimmed
    1/4 cup butter or margarine
    1/4 cup finely chopped green onions
    1 tablespoon all-purpose flour
    1/2 cup chicken stock
    3 tablespoons Dijon mustard
    1/4 cup heavy cream
    1/2 teaspoon salt
    1/8 teaspoon pepper
    Chopped parsley

    Recipe



    Scrub beets lightly.  In a large pan, cover beets with boiling water; boil for 35 minutes or until barely tender.  Drain under cold water, peel, then cut into 1/2-inch slices.

    In a large skillet, melt butter; add green onions and sauté for 4 minutes.  Stir in the flour; cook, stirring constantly, for 2 minutes.  Gradually add chicken broth, mustard, and cream; cook, stirring constantly, until thickened.  Add beets, stirring to coat.  Cool until heated through.  Stir in salt and pepper; sprinkle with parsley.
