Beets: Hot Beets

List of Ingredients
6 To 8 cooked and peeled beets
2 tb Margarine
2 tb Chopped scallions, including Some green tops
1 t Sugar
1 tb White vinegar
Salt
Freshly ground black pepper
1 tb Chopped parsley Recipe
Thinly slice the beets. In a saucepan over low heat, toss the beets with the margarine, scallions, sugar, vinegar, and salt and pepper. Cook until tender. Just before serving, sprinkle with the parsley. Yield: 6 servings
