    Beets: Beets in Sour Cream

    List of Ingredients


    1 pound shoestring beets, drained
    2 tablespoons butter
    2 teaspoons flour
    2 tablespoons vinegar
    1 tablespoon sugar
    1/4 teaspoon salt
    1/4 teaspoon dill weed
    1/8 teaspoon pepper
    1/2 cup sour cream
    3 tablespoons light cream

    Recipe

    Melt butter in medium saucepan over low heat. Blend in flour. Cook over low heat, stirring until mixture is smooth and bubbly. Remove from heat; stir in vinegar and the next 4 seasonings. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in beets; heat through. Stir together sour cream and light cream; heat through over low heat. Pour over hot beets. Serves 4.
