    Broccoli: Broccoli with Cheddar Cheese Sauce

    List of Ingredients

    2 heads broccoli, trim and cut into spears
    2 cups skim milk
    1 cup lowfat/no fat cheddar cheese, grated
    3 tablespoons cornstarch + 1/4 c. cold skim milk
    1 pinch nutmeg, white pepper, garlic powder -- and onion powder
    1 dash Worcestershire sauce

    Recipe

    Steam or parboil broccoli until tender. Combine milk and seasonings in a sauce pan. Bring milk to a simmer. Whisk in cornstarch mixture and thicken. Mix in cheese a little at a time and stir until smooth. Poor over broccoli spears and serve immediately. You can add any cheese you like, or use a combination of cheeses for a different flavor. For a really elegant dish you can garnish with minced parsley or grated egg whites.
