    Cabbage: Cheese Scalloped Cabbage

    1 medium Cabbage, cored, cut in small wedges
    1/2 cup Butter (or margarine.)
    1/4 cup Flour, all-purpose
    2 cups Milk
    1/2 teaspoon Salt
    1/4 teaspoon Pepper
    dash Nutmeg, ground
    2 cups Cheese, Cheddar shredded
    1 cup Breadcrumbs, soft

    Recipe



    Cook cabbage in a small amount of boiling water until tender; drain well. Melt butter in a heavy saucepan over low heat; add flour and cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt, pepper, and nutmeg. Remove from heat; add the shredded cabbage, stirring until melted. Place half the cabbage in a greased 2-1/2 quart casserole; top with half the cheese sauce. Repeat layers; top with breadcrumbs. Bake at 350 degrees for 30 to 35 minutes. Serves 8.
